This is a basic, super useful vegetable broth that serves as a base for soups, sauces, rice, and many other dishes. It's very easy to make using fresh vegetables or vegetable scraps.
1. Place the vegetables in a pot and add water until it covers the vegetables by approximately one finger's width.
2. Bring the pot to a boil over high heat.
3. Once boiling, reduce the heat to low and let it simmer for 30 minutes.
4. Strain the broth through a colander. The vegetable stock is now ready to use. (Note: Salt is often not added at this stage, as it's typically used as a base for other preparations where seasoning will be added later.)
