Summer Salad (Ensalada de Verano)

First, prepare your vinaigrette by mixing the olive oil, maple syrup, crushed pepper, and lemon. Then, combine the arugula, chopped tomatoes, cucumber, peaches, red onion, and cilantro in a bowl. Pour the vinaigrette over the salad and toss to combine.

Tip: If the taste of raw onion is too strong, you can soak it in cold water for 15 minutes to soften its flavor before adding it to the salad.
