A simplified version of traditional Italian Carbonara, made with common ingredients like bacon (or pancetta), whole eggs, Parmesan cheese, black pepper, and pasta. This recipe focuses on ease without sacrificing flavor.
1. Cook your pasta in boiling salted water. Remove it before it's al dente (subtract 2 minutes from the time indicated on the package).
2. Mix your eggs with the Parmesan cheese and pepper to taste until you get a thick mixture.
3. Cook the pancetta/bacon until it's crispy and set aside.
4. In the same pan as the bacon, add the pasta, 1/2 cup of pasta water, and mix well for a few seconds.
5. Remove from heat, add the egg mixture, and mix well until it's very creamy.
6. Finally, add the bacon and it's ready!
