The taste of this milk is 10 times better than any I've made, toasting the coconut in the oven for a few minutes gives it a WOW flavor. This toasted coconut milk can be used as an ingredient for many preparations or enjoyed on its own, with coffee or tea.

Instructions

1. Open a coconut, remove the pulp, and cut it into small pieces. (The coconut water can be drunk separately).
2. Place the coconut pieces on a baking sheet and toast them in the oven at 160°C (320°F) for approximately 7 minutes, or until they start to lightly brown. Remove from oven and let cool completely.
3. In a blender, combine the cooled toasted coconut pieces and 4 cups of water. Blend for about 2 minutes.
4. Let the mixture rest for 5 minutes.
5. Blend again for 1 more minute.
6. Using a plant milk filter (or a coffee cloth filter), strain the mixture, pressing the filter to extract as much milk as possible.
7. For added flavor (if consuming alone or with coffee/tea), after filtering, blend the milk again with 1 date, a pinch of salt, and 1 teaspoon of vanilla extract.
