A very easy galette recipe perfect for a quarantine weekend to brighten your day. It uses store-bought or homemade pie dough and a simple fruit filling.
Preheat your oven. Wash and cut the fruit you are going to use (e.g., peaches and strawberries). Add the fruit to a bowl, then add the panela, cornstarch, salt, and lemon juice. Stir well and let it rest for 5 minutes. Cut your pie dough into a large circle, using a plate as a guide if needed. Place the dough on a greased baking sheet. Using a fork, place the fruit filling in the center, leaving the border clean (try not to include too much liquid from the fruit). Fold the edges of the dough inward over the filling. Lastly, brush a little egg over the dough and sprinkle more panela or brown sugar. You can also add a small pat of butter in the center to prevent it from drying out. Bake at 190°C (375°F) for 15-20 minutes, or until the top is golden brown (remember to preheat your oven; baking time may vary depending on the size). Remove and let cool on a wire rack. You can serve this delicious treat with a scoop of ice cream and powdered sugar.
