Double Chocolate Oatmeal Cookies

1. In one bowl, mix the coconut oil, nut butter, panela powder, and egg. Stir well.
2. In another bowl, mix all the dry ingredients: oat flour, rolled oats, cocoa powder, baking powder, salt, and chocolate chips.
3. Incorporate the dry ingredients into the wet ingredients and mix very well.
4. Form small balls with your hands and place them on a baking sheet lined with parchment paper or a silicone mat. Flatten them with a fork or your hand (they will not expand in the oven).
5. Bake for 13-15 minutes at 180°C (350°F). Once they come out of the oven, you can sprinkle sea salt on top to contrast the flavors.
