This started as a mug cake but transformed into a delicious crispy crumble when cooked in an air fryer. It's perfect as a topping for yogurt, smoothie bowls, açai bowls, or anything you can imagine.
First, prepare the chia egg: combine 1/2 tablespoon of chia seeds with 2 tablespoons of water and let it rest for at least 5 minutes. In a cup, mix all ingredients, including the diced peach, almond flour, rolled oats, coconut oil, the prepared chia egg, ground panela, and almond milk. Originally, this was intended as a mug cake, so it was initially microwaved for 1.5 minutes, then broken up with a fork and transferred to an air fryer.
Alternatively, for a crispier result, you can cook it directly in the air fryer or oven from the beginning. Place the mixture in a mold and cook for approximately 20 minutes. Every 5 minutes, use a fork to mix and crumble it to prevent burning and ensure a consistent crumbly texture.
